
I have posted here the Classic Dan Dan Noodles (slight deviation because I didn’t know I had not bought the correct Chinese preserved vegetable). It was delicious, but the sauce was a bit too runny.
After I found my cookbooks, I saw that in Fuschia Dunlop’s Every Grain of Rice, there was also another version of the Dan Dan Noodles: Xie Laoban’s Dan Dan Noodles. In the book she explains how great the noodles from this tiny shop she would eat in China while she was studying was. She also tells how she got a hold of the recipe of this fantastic version.
I have made the recipe to as close as I could get to it (cut down significantly on the chilli). Behold: Xie Laoban’s Dan Dan Noodles!

This is not the best photo I could take of it, but the best one so far. Next time I make it (in a few weeks), I will photograph it again to try to get a better shot.
